Today I’m going to be sharing a recipe for Christmas Shortbread Cookies with a fair amount of weed involved but I need to explain something first.
I don’t make a lot of homemade canna-butter because I don’t know how to dose it in baking, and I wind up completely domed on the couch. So I’m going to be sharing a safer way that works better for me first, and include a quick tutorial on cranking out your own butter that can be used if my suggestions just aren’t powerful enough for ya.
I’m using pre-made edibles because they are very easy to dose for and they don’t have an overwhelmingly pot heavy taste to them. I think that cannabis producers have done a pretty remarkable job with them.
First off, the recipe itself. These are the simplest shortbread cookies you can get but they’re as close as I’ve found the way that my Grandma would crank them out so they’re my favourite.
Ingredients
2 cups (256 g) all-purpose flour
1 cup (115 g) powdered sugar
1/4 teaspoon kosher salt
1 cup (227 g) unsalted butter, room temp and cut into pieces
24 THC infused gummies or chocolates
Pinch of Nutmeg
Preheat oven to 325°F and line your baking sheets with parchment paper.
Mix flour, powdered sugar, salt and butter together. If you have a food processor use that, if not prepare to get a little messy. You will know it's ready once it's all one fantastic smelling lump that clumps together when pressed. Be careful of overworking the dough, it can make your shortbread cookies hard and brittle. Once it's all roughly together you’re good to go.
Dump the dough onto your counter with a little flour and gently knead it together until it loses the clumps. Work gently, this is the most important step. Pop the dough into the refrigerator for 10 to 20 minutes until it is a little tougher but still pliable, then flour your counter well and roll the dough out with a rolling pin. Cut your dough into whatever shapes you like and get ready to bake.
Now you’ve got options; if you went with the THC gummies, then carefully cut them into quarters and press gently into the tops of your cookies, one gummy per cookie. Bake your cookies one tray at a time for 18 - 22 minutes, when the tops become dry to the touch and the bottoms turn a golden brown.
If you went for the THC chocolates, melt them in a small pot on the stove at low-medium heat. Enough to melt them but not enough to see any visible smoke or vapour coming off the top. When your cookies are done baking, use a whisk to drizzle chocolate on top of your freshly baked cookies, then dip each cookie so roughly a third of it is covered in chocolate. Put the baking tray in the fridge for 20 minutes and you are golden!
Each cookie will be a decent dose but nothing crazy, four of them might put you on the couch, and your whole kitchen won’t smell too badly of weed. If you absolutely must, here’s how to whip up a quick batch of canna-butter. I use a crock pot for this and all you need is some water, some mason jars, two sticks of butter and 7-14 grams of your favourite bud. You will need a thermometer, temperature is important here.
Fill your crock pot roughly halfway with water, pop on the lid and heat to 160°F to 190°F (low). Cut your butter into cubes and throw them into the mason jars. Divide up your ground weed and add them to the mason jars, then cap the jars and put them into the crock pot. Cook for at least 2 hours, stirring and ‘burping’ the jars once an hour. You can cook them for up to 4 hours but 2 has always seemed to do just fine. When you’re ready, remove the jars and let cool. Using a strainer and cheesecloth, strain the mixture and place in whatever storage container you’re going to use. Throw it in the fridge until it firms up and then you’re ready to go! Use in a 1:1 substitute for regular butter in any recipe that needs to put you right to sleep.
